Summer Squash

What is it?
We grow green zucchini, yellow zucchini, yellow crookneck, ball squash, pattypans, and even two-toned Zephyr squash. They all work interchangeably in recipes.
You will want your scissors for these. Look for squash at least four inches long, then clip the thick stem carefully to free it from the plant.
Summer squash brings vitamin C and plenty of fiber, and has been linked to better eye health and skin.
How do I clean and store it?
Summer squash only need a quick rinse to remove any dirt. Let them air dry on a towel, then store them in a reusable silicone bag left partially open, or a container with the lid slightly loosened, in the fridge.
Recipes
Meg’s way: heat a splash of olive oil in a nonstick skillet. Sauté the diced summer squash until browned on all sides, season with kosher salt, and add a minced garlic clove and thinly sliced jalapeno.
